Well, regardless of whatever else I do/see in Sapporo, I’m already incredibly glad that I came here if only for the ramen at Amewa Yasashiku.

Seriously: if you’re in Sapporo, you absolutely, positively need to try this ramen.  And if you’re not in Sapporo?  Go buy a plane ticket.  It’s that good.  It’s either the best ramen I’ve ever had, or a very strong contender for that crown.

They serve a rich, creamy chicken-based ramen in three different varieties: shio, shoyu, or miso.  They (and Sapporo in general) are known for their miso ramen, so that’s what I ordered.

It’s an impressive looking bowl of ramen, with the most unique addition being the scoop of scallop paste on top.

I don’t even know if I can put into words how delicious it is.  It’s one of those dishes where it just gets better and better the more you eat it.

It’s outstanding.  There’s a truly remarkable level of complexity here, and a depth of flavour that’s pretty much bonkers.  And yet it isn’t particularly assertive in the way that even amazing bowls of ramen tend to be.

There’s so much going on, but it’s impressively subtle.

The broth is amazing.  It’s super rich, with a nicely rounded flavour from the miso that never gets old, and a delightful of amount of rich chicken flavour in every mouthful.

Then there’s the scallop paste.  I know “scallop paste” sounds weird, but man, that stuff.  It’s magical.

It has a slightly sweet, very pronounced punch of scallop flavour.  It’s basically like the best scallops you’ve ever had, but in a thick, chunky paste.  It melts into the soup and makes it even richer; it clings onto the noodles in a way that’s beyond satisfying.  Its light sweetness works so well with the savoury miso/chicken flavours in the soup.  It’s incredible.

It takes a bowl of ramen that was already amazing and makes it remarkable.

I honestly can’t say enough about the flavours here.  It’s like a symphony in your mouth.  I liked it more with every mouthful; I never stopped discovering new things.

Yeah, it’s an okay bowl of ramen, I guess.

The noodles are just as good as the soup, with the perfect thickness and just the right amount of bite.

The toppings are interesting, too.  It’s topped with chicken, the standard chashu, and some kind of sausagy thing?  I’m not sure what it is, but it’s delicious, of course.  The chicken is white meat, but it’s super tender and perfectly cooked.  The chashu is pretty standard (but delicious).

There are also a few small crunchy tubes — a couple of them are deep fried, and a couple are plain.  Apparently this is burdock root, which I don’t recall having in a bowl of ramen before.

It’s great.  It’s super crunchy, with a really interesting flavour that’s sweet and vaguely citrusy, but also meaty?  It’s hard to describe.

The whole thing is so damn amazing that I did something that I’ve never done before — a couple of hours later, I came right back and had another bowl.  I couldn’t resist!  It’s so good.

It’s not a particularly light bowl of ramen, so I don’t necessarily recommend doing this, but also I regret nothing.
