The beef soup from Ah Cun might just be the simplest dish I’ve eaten since coming to Taiwan.  It’s basically just chunks of beef in a simple broth.

It’s proof that if your ingredients and your technique are top-notch, then you really don’t need to overthink things.  Simpler is better.

The broth itself is very mildly spiced, but it has such a clean, irresistible beefy flavour.  This was one of the rare times I didn’t bother using the jar of chili sauce on the table; I didn’t want anything to get in the way of that amazingly subtle flavour.

And the chunks of beef are fantastic — they’re incredibly tender, and they pack a wallop of meaty, beefy flavour.  It’s pretty obvious that they’re using great quality beef, because the flavour is ridiculous.

It comes with a small bowl of rice and a thick, sweet sauce with a whole bunch of shredded ginger.  I mostly just ate the sauce with the rice; the soup was perfect as it was.
