There’s a popular street food stall near my hotel that was cooking up some kind of omelette-esque dish as I was walking by. It looked tasty enough, so I stopped, pointed, and I was off to the races.
It turned out to be banh chao, the Cambodian version of banh xeo (which is a Vietnamese crepe stuffed with various savoury fillings).
It looks eggy, but it actually gets that colour from turmeric, not eggs.
I quite enjoyed this. The wrapper was crispy and a bit chewy, and it was filled with a tasty stuffing consisting of mung beans and ground pork. The fish sauce on top gives it some zinginess, and the lettuce gives it additional crunch.
The guy next to me was eating a bowl of noodles that looked tasty, so I pointed to that and soon found myself with my own bowl.
It wound up being a variation on bun thit nuong, a Vietnamese noodle salad typically served with grilled pork. This one had the same ground pork from the banh chao (and a lot of the same flavours, including the fish sauce and the crunchy lettuce). It also had a nice handful of fresh herbs (mint was quite prominent). Like the banh chao, it was quite good.
