Beef noodle soup is a classic Taiwanese dish, and at Gang Yuan, they serve it with a bit of a twist — you can order it dry (though the classic soup version is also an option).
It’s tasty, but I’ll admit it — I kinda missed the soup.
There is, however, a small amount of very concentrated, oily broth at the bottom of the bowl that does a pretty great job of clinging to the noodles. The dish manages to have a nice beefy flavour that’s livened up by the pops of freshness you get from the green onions.
And the noodles are nice and thick, with a really robust chewiness.
It’s not bad at all, but it’s never quite able to recapture the greatness of the classic soup version.
It probably doesn’t help that the chunks of beef are fairly tough, which makes the whole dish quite a bit less satisfying than it would be otherwise.
