After my disappointing experience with the lauded (but sadly mediocre) waffles at Maison Dandoy, it felt like I had unfinished business. How could I leave Belgium without having delicious waffles?
A place called Eight & Three looked promising enough, and bonus: the liege waffles were only €2. That’s less than half of the price of the waffles at Dandoy.
It was a solid waffle. It was nothing too mind-blowing, but at least it was an upgrade over something I can get in a plastic bag at the supermarket.
It had a decent amount of caramelization on the outside, with a nice crispy exterior and some pleasantly crunchy bits of burnt sugar.
It also had a bit more depth to its flavour than just sugary cake. The texture was slightly fluffy, but still cakey in a way that was quite pleasant.
It wasn’t quite the mind-blowing revelation you’d hope for from a Belgian waffle in Belgium, but it was tasty enough.

How to find it: It’s actually not too far from Maison Dandoy, so just keep walking past that place and go here instead.
