They take their cinnamon rolls (or kanelsnegle) pretty seriously in Copenhagen, and most people seem to agree that some of the tastiest ones can be found at Skt. Peders Bageri.
I just ate one, and yeah — that makes sense. It’s amazing.
The rolls they serve at Skt. Peders Bageri are called onsdag snegle (Wednesday rolls), and they’re actually a bit cheaper on Wednesdays. I think the only difference is that they’re slightly larger than a standard kanelsnegle.
It’s ridiculously good. It’s basically the polar opposite of the mushy sugar-bombs you’ll find at a place like Cinnabon. It actually has some texture, but it definitely isn’t lacking for the sweet gooiness you’re looking for in a cinnamon roll.
The sweetness level feels perfectly tuned; it’s sugary enough to perk you up, but not so much that it feels cloying. It either comes topped with icing or with sugar; the woman behind the counter let me know that her favourite is sugar, so that’s what I went with.
She definitely didn’t steer me wrong — the layer of sugar adds a delightful crispiness that contrasts nicely with the soft bun.
And the pastry itself is great — a bit dense and crispy around the edges, and then soft and chewy in the middle. Combined with a generous amount of the sweet cinnamon filling, it’s an absolutely outstanding pastry.
