I had sausages a couple of times in Prague, and they were both okay (well, one was mediocre and one was pretty good, so they average out to okay), but neither were the mind-blowing sausage experience that you’d hope for from a place that really knows their sausages.
It may not have happened in Prague, but I just had that experience in Budapest.
Though Belvárosi Disznótoros has a pretty tasty looking spread, including stuff like schnitzel and various stews, the sausage is the thing to order.
It comes with a healthy dollop of mustard and your choice of side; I went with the cabbage.
Man, it’s so good. It’s absolutely crammed with flavour, but with a really satisfying porkiness that shines through. It’s incredibly greasy, but greasy in the best way possible.
The texture is great, too; it retains a nice meaty substance, and never feels overly smooth or hot doggy. And the casing has a perfect snappy, crispy bite.
It comes with a good amount of mustard, which turns out to be completely superfluous. It’s amazing on its own; I didn’t want anything to disguise that incredible flavour.
The cabbage was quite good too — a bit sweet, a bit vinegary, and tender without being mushy. But I kind of wished that I had skipped the side and just ordered another sausage.
