I think it’s quite possible that pav bhaji might have the most butter you can cram into one meal.  It’s pretty intense (and delicious).

Pav bhaji is a super popular Indian street food in which a mix of veggies and vibrant spices are cooked down into a sauce-like consistency (the bhaji) and then served with soft rolls for dipping (the pav).

Basically every step of cooking this stuff involves copious amounts of butter.  The veggies are cooked with butter, the rolls are heated up on the griddle with a surprising amount of the stuff (they’re pretty much soaked through),  and finally, it’s served with an additional slab of butter on top.

It’s quite good.  The bhaji is creamy and packed with flavour, particularly once you add some of the zingy red chili sauce on the side.  The very soft, butter-soaked bread is a perfect vehicle for the bhaji.  And though I mostly skipped the chopped onions that come on the side, they do add a nice crunch that contrasts nicely with the soft bread and sauce.

How to find it: There are at least four or five pav bhaji vendors clustered on this particular street corner.  One called “Purana Pandit’s Pao Bhaji” came recommended, but since there’s no English on any of the stalls, I have no idea if that’s the one I ate at.
