There’s a deep fried pastry in India called kachori that’s a popular street food snack.  It’s super popular in Jaipur; walk around the city and it won’t be long before you come across a vendor selling the stuff.

At this particular stall, they cut it up into chunks and then cover it with a very liberal amount of a tasty yellow sauce.  A vibrant red chili sauce is also an option, which you’re definitely going to want.

It’s quite samosa-esque (and it’s often sold alongside samosas, as it was at this particular stall), only with a slightly heartier exterior.  The crust is actually pretty great — it’s a bit flaky, with a nice crispy crunch that manages to hold up to the deluge of sauce.

The flavour is really satisfying, particularly with addition of the sweet, savoury, mustard-like sauce (not to mention the slight kick you get from the chili sauce).  This particular stall was very crowded, and once I took my first bite it was obvious why.
