Thessaloniki’s love for flaky pies is actually pretty impressive.  It probably helps that it’s a great, quick breakfast that you can eat on the go.  Seeing people munching on a slice of pie in a paper bag is an extremely common sight in the morning.

Bakeries selling this stuff are pretty much everywhere in the city, but I had heard especially good things about Oi Pites Tis Voulas.  And indeed, the shop does very brisk business, and because the pies are all fresh, there’s no need to heat them up.  So everyone is in and out in something like thirty seconds.

It’s a delightful system.  I ordered the cheese pie, and had a hot, fresh slice of pie in my hand within seconds.

It’s a great breakfast.  The pastry here was especially enjoyable, with a much more thick and rugged consistency than your average phyllo dough.  The individual layers were thick, buttery, and delightfully crunchy.

The crispy crust contrasts very nicely with the soft, salty cheese.  It’s really tasty, and substantial enough to keep you going until lunch.  It’s good stuff.
